Chef de Partie may specialise as a larder cook, butcher, pastry cook, sauce cook, roast cook, relief cook, side-dish cook, breakfast cook, canteen cook or fish cook. These chef jobs are sometimes also described as Assistant Chefs or Sous Chefs. They have responsibility for a particular section within the kitchen, as well as helping with general kitchen management, maintenance of Health and Hygiene records, menu development, etc. This is a senior position in the kitchen. The senior Chef de Partie (also called sous chef) will usually be in overall charge when the head chef is away.
